Our Philosophy

The ancient Greek word ἅλς carries two meanings: sea and salt. Together, they capture the essence of Greek life, where the sea shapes the land and salt shapes the table.

At Alós, this connection is at the heart of everything we do.

Our menus follow the rhythm of the seasons, celebrating the Greek Culinary Heritage. Inspired by the sea, the land, and the people who cultivate them, every dish is rooted in a true sense of place.

In Greece, the table has always been more than a place to eat. It is where conversations start, stories are shared, and time slows down. Hospitality is not only a service, but a tradition passed from one generation to the next.

As the world moves faster, time has become life’s greatest luxury. At Alós, our purpose is simple: to create experiences that invite you to slow down, reconnect, and savour the moments that matter most.

Behind the Apron

Chef Stamatis Salpadimos began his culinary journey at the age of 17. After studying at a prestigious French culinary school, he refined his skills working alongside some of Greece’s leading chefs.

His international experience includes working in London, with three Michelin-starred Chef Clare Smyth at Core by Clare Smyth and at the renowned Bacchanalia Mayfair.

With experience catering large-scale events, including the BAFTA Film Awards, Chef Stamatis brings creativity, passion, and authenticity to every dish.
He especially loves cooking over an open fire, embracing traditional techniques that enhance the natural flavors of every ingredient.

Greek Culinary Heritage

The origins of Greek cuisine date back thousands of years and have been shaped by many cultures. Ancient Greek traditions form its foundation, while influences from the Roman, Byzantine, and Ottoman periods introduced new cooking
techniques, spices, and ingredients.

Trade across the Mediterranean also brought flavors from the Middle East, Italy, and North Africa, creating the diverse and flavorful cuisine enjoyed in Greece today. The result is a culinary tradition that combines history, culture, and healthy eating in a unique way.

Greek cuisine is widely known for its fresh ingredients, simple preparation, and balanced flavors. It is considered one of the
healthiest cuisines in the world because it is based on the Mediterranean diet, which emphasizes vegetables, fruits, legumes, whole grains, olive oil, fish, and moderate amounts of dairy and meat. These foods are rich in nutrients, healthy fats, and antioxidants that support overall well-being.
